You may have already come across the Nigerian Beans and corn Porridge(Adalu) recipe, here on the blog. The combination of beans and corn is a delicious way to eat your beans and get your fiber without sacrificing taste and flavor. Even though it is traditionally prepared with fresh corn, I'd say that I enjoy it better when prepared with the canned sweet corn . And for extra richness and nourishment, I serve it with some stir-fried greens. Catfish Pepper Soup a.k.a ''point and kill'' is another delicious Nigerian Pepper soup recipe. It is one of my favorite comfort food and is also easy to prepare. Catfish Pepper Soup is called 'point and kill'' , because of how the fish is picked up at the local Nigerian market . At the market, you'll be told to point out your fish of choice from a large bowl of tight swimming fishes; the catfish is then killed, wrapped up for you and ready for the kitchen. Homemade Peanut Butter(groundnut butter)

Homemade Peanut Butter is so easy to make and does not contain any additives or preservatives.  It is also a good source of protein, carbohydrates and good fat, and enjoyed by kids and adults as well. Peanut Butter serves as a yummy spread for bread and can be used in cookie recipes and other delicious snacks.    If you've never made Homemade Peanut Butter from scratch, I challenge you to try out this easy method, you'll be glad you did. Ingredients: -500grams roasted Peanut or groundnut - 1 pinch of  salt( optional) - 2 teaspoons sugar(optional, but makes it sweeter) - 2 teaspoons Peanut or vegetable oil(for lighter consistency) Note: All you really need for making all-natural peanut butter is ONLY peanut (groundnut), but a some people like it sweeter and of lighter consistency, that's why I provided the other ingredients.  Simply, leave out the extra ingredients if you like it all-natural.
