The ingredients consist of sugar, pepper and onion, which gives the pancake a sweet, slightly spicy and savory taste, that will keep you asking for more.      During my varsity years,there was a ' 'kitchen debate '' among my flat mates on whether or not, onions and peppers were required in Pancakes;the first group would only use peppers in theirs', while the other  group won't have pancakes without onions ; at the end it was finally concluded that these two ingredients ( when added to your taste ) are what really gives the Nigerian Pancake it's distinct taste.      I always use both and my pancakes come out irresistible; you should try it out. Homemade Peanut Butter is so easy to make and does not contain any additives or preservatives.  It is also a good source of protein, carbohydrates and good fat, and enjoyed by kids and adults as well. Peanut Butter serves as a yummy spread for bread and can be used in cookie recipes and other delicious snacks.    If you've never made Homemade Peanut Butter from scratch, I challenge you to try out this easy method, you'll be glad you did. Ingredients: -500grams roasted Peanut or groundnut - 1 pinch of  salt( optional) - 2 teaspoons sugar(optional, but makes it sweeter) - 2 teaspoons Peanut or vegetable oil(for lighter consistency) Note: All you really need for making all-natural peanut butter is ONLY peanut (groundnut), but a some people like it sweeter and of lighter consistency, that's why I provided the other ingredients.  Simply, leave out the extra ingredients if you like it all-natural.  Condensed milk toffee is one of my favorite candies. I like how it's a bit hard on the outside, but gets chewy as you enjoy its milky sweetness.     I loved this toffee as a kid and still do now.Here's how to make this famous old school Condensed milk toffee. Be Warned!! It could be very addictive! ☺ . Flour Tortilla is one of the best flat breads ever. It is so easy to prepare and takes no time .  I make Flour Tortilla and Pita Bread, to use as a shawarma wrap and just love it. Here's my pita bread recipe   Flour Tortilla is usually made with baking powder, but I'll show you how to also prepare this flat bread with yeast. Banana Cake topped with yogurt and raisins Banana cake is one of our favorite fruit cakes. We love bananas  and usually never get left overs in the fruit tray.   Last week, my hubby and our lil' princess visited the farmer's market and came home with a huge bundle of ripe bananas.    For 3 days,we snacked on those beauties ; I made Banana pancakes , Energy smoothies and ice cream and was finally left with one lonely over ripe banana.    At that moment I realized that I didn't make any Banana Cake ( I can't believe I forgot )....Ayyyy! all those bananas... gooooone!Lol ☺.   Well, here's a no fail Banana cake recipe..I made it with one banana, but you can double up the ingredients, if you want a large cake.       Nigerian mini donuts/doughnuts are the smaller version of the popular Donuts.   This smaller sized donuts have suddenly become a common sight at the small chop/appetizer meal section of most Nigerian festive gatherings.    I enjoy making jam filled donuts for birthday parties and love it when the kids(and adults) bite into it and gaze at the juicy jelly reward...Lol.. that's what my daughter calls it... '' juicy jelly' ' ☺ ☺ . Dodo Gizzard / Gizdodo Recipe (Gizzards and Plantains)

Gizdodo/Dodo Gizzards are coined names for a Nigerian dish prepared with a combination of gizzards and plantains (dodo).       This is one of those recipes ''invented'' from excesses or in order to reduce food wastage. If you've read through my older posts, you'll know that I love plantains.... a lot.  So you bet I also love Dodo gizzards ☺.       Chicken gizzards is best used for this recipe, but you can also substitute it for turkey or duck gizzards. As for the plantains, I'll highly recommend ripe plantains with some black spots(on the skin), but not overly ripe, so that you don't end up with a less appealing meal.       Gizdodo is also known as Gizzards and dodo, or Gizzdo , so if you see it on a buffet menu, don't be flustered...it's just your normal gizzards and plantain...with a yummy spicy twist ☺.    It is also a party favorite and served as a meal or accompanied by other dishes or sma...
