Nigerian Plantain Porridge Nigerian Plantain Porridge is a rich meal that all plantain lovers will surely enjoy. It can be prepared with either ripe or unripe plantains or a combination of both. Even if you're not a plantain lover, you should give this meal a try, because plantains are rich in fiber, minerals( potasium, magnesium, iron, phosphorous ) and Vitamins( A, B6 and C ). Battered plantain served with ''mayo-ketch'' Battered plantain has become one of my favorite plantain recipes . I had the pleasure of eating it at an Asian wedding. Dodo Gizzard / Gizdodo Recipe (Gizzards and Plantains)

Gizdodo/Dodo Gizzards are coined names for a Nigerian dish prepared with a combination of gizzards and plantains (dodo).       This is one of those recipes ''invented'' from excesses or in order to reduce food wastage. If you've read through my older posts, you'll know that I love plantains.... a lot.  So you bet I also love Dodo gizzards ☺.       Chicken gizzards is best used for this recipe, but you can also substitute it for turkey or duck gizzards. As for the plantains, I'll highly recommend ripe plantains with some black spots(on the skin), but not overly ripe, so that you don't end up with a less appealing meal.       Gizdodo is also known as Gizzards and dodo, or Gizzdo , so if you see it on a buffet menu, don't be flustered...it's just your normal gizzards and plantain...with a yummy spicy twist ☺.    It is also a party favorite and served as a meal or accompanied by other dishes or sma...

Nigerian Plantain Mosa ... yummy Nigerian Snack Plantain Mosa is a delicious Nigerian snack that is made from over ripe plantains , mixed with eggs, pepper , select spices and deep fried. It is so easy to make and a  great way to make use of over ripe plantains in the kitchen.    It is usually confused with A kara or yam puffs(ojojo) because of their similarities in shape. Ingredients for Plantain Mosa 1  ripe plantain(usually over ripe ones) 1 raw  egg(break egg an set aside) 2 tablespoonful Flour Ground red chilli pepper (to taste) Salt (to taste) Vegetable oil for frying Plantain Mosa cooking Directions *Cut and peel the plantain. *Mash thoroughly , and add  the egg, flour, salt and pepper. Boiled Plantain is one of the easiest Nigerian foods to prepare. It takes a little time and also tastes delicious. It is actually one of my favorite meals . I have to confess that I love plantains *yeah, I'm a confirmed plantain lover*...hehehe. It was one of the first meals I learnt to prepare, so for ''beginners'' out there..here is one recipe you can't go wrong with and kids love it too *wink wink* Boiled Plantain - ingredients * 2 ripe plantains/unripe plantains (ripe plantains are sweeter, than unripe plantains, and takes less time to cook, but unripe plantains are also great if you're watching your sugar intake) *Salt to taste *Water (enough to cover the plantains) Boiled Plantain- cooking directions * First wash the plantains thoroughly.
