Scalded flour- Scandinavian Natural Dough Improver

    Scalded flour (Poolish) is a natural dough improver used by the  Scandinavian to boost the texture and taste of their breads.  It  terms of functions, it is similar to Tanzhong but the difference is in the way both dough conditioners are prepared.     For the Scalded flour you'll need: - 100 gr Bread Flour/Plain flour - 100 ml boiling hot water Steps 1. Pour all the boiling hot water into a bowl containing the 100gr bread flour. 2. Stir the mixture quickly until well combined, then cover with a lid or cling film and leave to cool to room temperature (this takes about 1 hour depending on the weather)  When the the batter cools , use as desired. Cooled scalded flour ready to use Don't worry if the dough looks rough, after 1 hour the flour would have absorbed all the water and look smoother.   Tangzhong is a  natural dough conditioner , also known as the Japanese 65ºC Water roux starter.    It is a starter that has been used for ages by the Asians to achieve a soft, stretchy and fluffy bread dough. It also serves as a natural preservative and keeps the bread fresh for up to 4 days. ++see how we used if for this pull apart bread++ To prepare this starter, You'll need  - 250ml Water or whole milk   - 50gr Bread flour Steps 1. In a saucepan or small pot, mix flour and water/milk together until smooth. 2. Cook on medium heat, stirring constantly with a spatula or a hand whisk to prevent burning.  After some seconds, you will begin to see lots of small bubbles forming on the top of the roux.                      3. Flour Tortilla is one of the best flat breads ever. It is so easy to prepare and takes no time .  I make Flour Tortilla and Pita Bread, to use as a shawarma wrap and just love it. Here's my pita bread recipe   Flour Tortilla is usually made with baking powder, but I'll show you how to also prepare this flat bread with yeast. For the Homemade Shawarma Bread( Flour Tortilla  with baking powder) You'll need: * 480 Grams(about 3 cups) Plain flour/ Whole Wheat flour * 70 Grams(Half cup) Plain flour/ Whole Wheat flour(for dusting& Kneading) * 1 cup Warm Water(tepid water)Or warm milk * 1 tablespoon baking powder * 3/4 teaspoon Salt * 2 teaspoon melted butter/Olive oil/lard(optional) (1 teaspoon is for oiling the bowl)   You can add a little sugar if you like sweet bread :)   Preparation * In a large bowl,Mix the flour , baking powder and salt together; add a teaspoon of oil/melted butter( if you're using an y).    Mix together and add more water as you...

Homemade Shawarma Bread in A Pan & Oven( Pita bread/ Naan Flat Bread)

Shawarma bread (Pita Bread) is so easy to make. All you need are 3 or 4( if you add oil) basic ingredients, that I bet you already have in your kitchen. I love making food from scratch and love it more when the process is easy and takes little or no time. You don't have to be a cook, to  make this bread;even if you haven't baked bread before, you won't have any problems making this flat bread . I'll show you how Shawarma bread is made on a pan ( stove top ) and in an oven. Both methods are great, but with the pan, you get the distinctive brown spots of pita bread , while in an oven you don't get as much( except you are using an oven stone ).    This is how I used mine for Chicken Shawarma ( Looks good, right?).
