Catfish Pepper Soup a.k.a ''point and kill'' is another delicious Nigerian Pepper soup recipe. It is one of my favorite comfort food and is also easy to prepare. Catfish Pepper Soup is called 'point and kill'' , because of how the fish is picked up at the local Nigerian market . At the market, you'll be told to point out your fish of choice from a large bowl of tight swimming fishes; the catfish is then killed, wrapped up for you and ready for the kitchen. The ingredients consist of sugar, pepper and onion, which gives the pancake a sweet, slightly spicy and savory taste, that will keep you asking for more.      During my varsity years,there was a ' 'kitchen debate '' among my flat mates on whether or not, onions and peppers were required in Pancakes;the first group would only use peppers in theirs', while the other  group won't have pancakes without onions ; at the end it was finally concluded that these two ingredients ( when added to your taste ) are what really gives the Nigerian Pancake it's distinct taste.      I always use both and my pancakes come out irresistible; you should try it out. Homemade Peanut Butter is so easy to make and does not contain any additives or preservatives.  It is also a good source of protein, carbohydrates and good fat, and enjoyed by kids and adults as well. Peanut Butter serves as a yummy spread for bread and can be used in cookie recipes and other delicious snacks.    If you've never made Homemade Peanut Butter from scratch, I challenge you to try out this easy method, you'll be glad you did. Ingredients: -500grams roasted Peanut or groundnut - 1 pinch of  salt( optional) - 2 teaspoons sugar(optional, but makes it sweeter) - 2 teaspoons Peanut or vegetable oil(for lighter consistency) Note: All you really need for making all-natural peanut butter is ONLY peanut (groundnut), but a some people like it sweeter and of lighter consistency, that's why I provided the other ingredients.  Simply, leave out the extra ingredients if you like it all-natural. Boiled Plantain is one of the easiest Nigerian foods to prepare. It takes a little time and also tastes delicious. It is actually one of my favorite meals . I have to confess that I love plantains *yeah, I'm a confirmed plantain lover*...hehehe. It was one of the first meals I learnt to prepare, so for ''beginners'' out there..here is one recipe you can't go wrong with and kids love it too *wink wink* Boiled Plantain - ingredients * 2 ripe plantains/unripe plantains (ripe plantains are sweeter, than unripe plantains, and takes less time to cook, but unripe plantains are also great if you're watching your sugar intake) *Salt to taste *Water (enough to cover the plantains) Boiled Plantain- cooking directions * First wash the plantains thoroughly. Agidi Jollof served with soup.....simply delicious! Agidi Jollof is a Nigerian meal that is eaten anytime of the day. It is made with corn flour (corn starch)  just as you do with the normal Agidi , but the pink or red color is achieved by adding tomato stew to it ...enjoy. Today, you'll Learn how to fry the perfect plantains.  Ingredients: 2 ripe plantain s Vegetable oil for frying How to Fry Plantains *Make a shallow cut on the plantain and peel off the skin from that point *Cut into any desired shape , sprinkle a little salt and  add some drops of water to help get the salt on each plantain. *Heat up the vegetable oil in a frying pan.. The oil should be very hot so that the plantains does not soak up much oil.
