Nkwobi , Nigerian Spicy cow foot Nkwobi is a traditional eastern Nigerian delicacy which is served mostly at restaurants, special social events and usually enjoyed by all.   It is prepared with cooked de-hoofed cow foot(popularly known as ''cow leg''), palm oil  and a mix spices.  I love nkwobi , but don't wait for festive days to prepare it. Here's how I prepare mine and trust, you'll enjoy it.   Nkwobi Ingredients  - 1kg cow foot (cut into bite-able sizes) - 100ml Palm Oil - 1 teaspoon ground  Calabash Nutmeg (Ehu /ehuru seeds) - 1 teaspoon ground edible potash (Akanwu/Kaun) - 2 tablespoons ground crayfish - Ground Scotch bonnet/atarado peppers or ground dried pepper (to taste) - 1 medium onion for cooking the cow foot - 2  stock cubes - Salt to taste For  garnishing the Nkwobi, you need : - 1 medium onion bulb (cut into rings) - 5 Utazi leaves (you can make use of spinach or washed bitter leaf as an alternative) Nkwobi cooking directions a. Agidi Jollof served with soup.....simply delicious! Agidi Jollof is a Nigerian meal that is eaten anytime of the day. It is made with corn flour (corn starch)  just as you do with the normal Agidi , but the pink or red color is achieved by adding tomato stew to it ...enjoy. Agidi Jollof Ingredients *3 tablespoonful corn starch ( the type for making akamu or pap) *4 medium sized fresh tomatoes *1 medium sized scotch bonnet/Atarodo pepper *1 small sized Red bell pepper/ tatashe *1 Chopped medium sized onion *2 handfuls of  minced meat/ minced chicken/ mashed boneless fish or soft Marrow bones *2 cookingspoonful vegetable oil *Water about 750 ml *2 bouillon cubes (maggi/knorr) as Seasoning *Salt to taste Before making the Agidi Jollof * First, you have to prepare the Agidi Stew( if you have  any red stew , you can skip this step). -To do this, blend the tomatoes, peppers and onions. -Pour into a pot to dry out the excess liquid. -Place a pot on heat, add some oil and pour in the tomato

               Fried Plantains...yummy!  Nigerian Fried plantains is easy to make and simply delicious. Today, you'll Learn how to fry the perfect plantains.  Ingredients: 2 ripe plantain s Vegetable oil for frying How to Fry Plantains *Make a shallow cut on the plantain and peel off the skin from that point *Cut into any desired shape , sprinkle a little salt and  add some drops of water to help get the salt on each plantain. *Heat up the vegetable oil in a frying pan.. The oil should be very hot so that the plantains does not soak up much oil.
